A grist using heritage barley and oats was mashed and transferred to Chardonnay oak casks where it fermented and aged for three and a half years with wild yeast captured at Lisnagra Woods in Muff. Sweet and dry, with a clean and gentle tartness, expect flavours of white grape, vanilla fudge and a hint of orange in the finish.
